The bogue (Boops boops) Sparidae family, is a Mediterranean fish not expensive (5 € / kg) cooked fried and dipped in a marinade of vinegar and flavors.
Recipe for 1 kg of fish.
1) Clean the fish entrails and decapitations. Wash.
2) Breaded fish with flour.
3) Fry in vegetable oil.
4) Prepare a marinade with garlic, onion, rosemary, sage, chilli, bay leaf, thyme, one cup of vinegar, one cup of water.
5) Boil the marinade for 10 minutes.
6) Place the fish in a bowl, pour over the marinade and let stand 24 hours.
