Poulet: to make shrimp juice:boil shrimp head and shells in 1/2 cup of water, then remove from fire, and process in a blender. With a cloth or strainer, drain the juice and discard the shells and heads... (read that somewhere..sorry, i forgot the website!!); crushed chicharon is just deep-fried pork rinds that has been "crushed" till it becomes crumbly... :))
the annato seeds are used to impart a certain flavor and coloring to the dish..the tree where you can get these seeds are also called lipstick tree or achiote...here's a website that might help (it's got pictures, too!!) :
