It is not uncommon to see the severed heads in markets of supermarkets still apparently gasping for breath. This is in fact just a post mortem muscle spasm. They are not still alive as some idiots have claimed on the internet. In fact, the clever Chinese cooks will try to ensure they are still twitching around the mouth, this being a sign of freshness.
