Big flava...

The freshness of the ingredients was especially key in this paella in Madrid. This oxtail in Granada stood out amongst the competition because of a heavier use of wine in the braising liquid that definitely added rather than overpowered. Finally this skewered pork in Sevilla was cooked to perfection-- seared, yet tender.
