My entry for WORDPLAYFRIDAY:
" HOME-MADE "
This is my home-made Thai authentic dish which you can not find in the restaurant.
** Gang-kua Gai-yang sai Karton **
(Charcoal-grilled Chicken and Santol Slightly Sweet & Sour taste Red Curry.)
RECIPE :
Ingredients :
- 3 Charcoal-grilled Chicken legs (or breasts)cut into pieces.
- 1 cup coconut thick cream
- 2 cups coconut milk
- 2 tbsp. fish sauce
- 1-3 tbsp. palm sugar
- 2-3 ripe Santol (use half ripe or raw plum or peach instead of it)
- A pinch of salt
- 4-5 Kiffir lime leaves
Red Chili paste:
(Instead of make it yourself, just buy Red Curry paste – Lobo brand or Mae Sri Ruan brand --- 100 grm.)
- 7 dried red pepper (big size)
- 1/2 tbsp. minced galingale
- 1 tbsp. minced lemongrass (white part only)
- 10 cloves garlic
- 2 tbsp. minced shallot
- 1 tsp. salt
- 1 tsp. pepper
- 1 tsp. minced coriander roots
- 1/2 tsp. kaffir lime skin
- 1 tsp. shrimp paste
- 2 tbsp. grounded dried shrimp
PREPARATIONS :
1. Ground all the paste ingredients together. Set aside.
2. Pour coconut cream into the pot and heat it with low fire. Add the paste from step 1 and keep stirring.
3. Bring to boild. Add Santol, simmer around 15 minutes or until it became tender.
4. Add fish sauce, coconut milk, palm sugar and a pinch of salt.
5. Add Charcoal-grilled Chicken and cook for 10-15 minutes.
6. Add Kiffir Lime leaves, stirr, remove from the stove.
Served hot with Thai fragrance rice.
